Cup-cakes for Helene’s taste.

I know … I am not updating the blog at all!!!

However, I am  finally posting the 2010 Christmas cake :). Just in the middle of the spring. 

It is a cold cake (traditional Brazilian desert) decorated with fondant and fruits.

Follow the recipe:

- Dough

4 eggs

2 tea cups sugar

2 tea cups wheat flour (white)

250 ml orange juice

1 soup spoon yeast

- Ice

250 ml coconut milk

250 ml condensed milk

250 ml milk

200 g shredded coconut 

Preparing:

Dough:

Using a mixer, beat the egg whites

Add sugar and beat for another 3 minutes

Place the egg yolks, wheat, orange juice and continue beating until they form homogeneous mass

Finally put the yeast, whisk for 40 seconds at the mixer lowest speed 

Bake in preheated oven at medium temperature for about 40 minutes or until golden

Ice:

Mix well in a bowl the milk, the coconut milk and  the condensed milk. Reserve.

Once the cake has baked, remove it from the oven and pierce its entire surface with fork or knife, so the ice can penetrate

While the cake stills warm cover it with the ice.

Sprinkle shredded coconut on top

Refrigerate for about 3 hours
